Garlic and a Dijon Mayo Mustard sauce add flavor to the Baked Parmesan Dijon Chicken recipe. This is a family favorite that is quick, easy, and tasty enough to serve to company.
Baked Garlic Parmesan Dijon Chicken
Yields: 4 Servings
Chicken Breast, 4 boneless breasts
Butter, 2 Tablespoons
Olive Oil, 2 Tablespoons
Garlic, Minced, 1 Tablespoon
Dijon Mustard, 1/3 Cup + 4 Tablespoons
Mayonnaise, 1/3 Cup
Bread Crumbs, Italian with Romano Cheese, 1 ¼ Cups
Parmesan Cheese, Shredded, 5 Tablespoons
Step 1 – Gather Ingredients and Prep Chicken Breasts
Gather your ingredients and prepare the chicken. If the chicken breasts are super thick you can either cut in half or pound gently. Thin sliced cutlets tend to be too thin but will work if you reduce the baking time.
Step 2 – Garlic Dijon Marinade
Melt Butter with Olive Oil in a pan over low heat. Add garlic and simmer for 3 minutes being careful not to burn the garlic. Remove pan from heat and stir in 4 Tablespoons of Dijon mustard. Let cool to the touch but not solidify and whip vigorously until mixture thickens.
Step 3 – Parmesan Breading
Stir the Italian breadcrumbs and shredded Parmesan cheese together in a pie pan or other shallow bowl. If you don’t have Italian breadcrumbs you can add a little Italian Seasoning to the mixture.
Dip the chicken in the cooled Garlic Dijon Marinade coating all sides. Next dip into the Parmesan Breading Mixture patting the crumbs onto chicken to coat well. Place the coated chicken on a nonstick baking sheet in a single layer. Cover and refrigerate.
Tips: This can be made in the morning and refrigerated for several hours if you want to prepare ahead for a meal. I have also been in a rush and gone straight from coating to baking. It still tastes great but the breading just doesn’t set as well.
Step 4 – Dijon Mustard Mayonnaise Sauce
Combine 1/3 Cup Dijon Mustard with 1/3 Cup Mayonnaise and stir thoroughly. Refrigerate unless serving immediately. Using good mustard and mayo makes a difference in taste. If this is too strong of a Dijon flavor for your palette go from equal parts mustard-mayo to a 2 to 1 ratio of mayo to mustard.
Step 5 – Bake Chicken Parmesan Dijon Chicken
Preheat oven to 350 degrees. Place the chicken breasts on the baking sheet into the oven and bake for 15 minutes (less for very thin breasts and more for very thick breasts). Chicken should be lightly browned and moist on the inside. Serve with the Dijon-Mayo Sauce. This goes great with a baked potato and salad.
