Love the smell of banana bread baking in the oven? So do we! Of course the only thing better is eating it fresh from the oven. Here is a great recipe for moist and flavorful Walnut Banana Bread.
Banana Bread Recipe
Yields: One Large Loaf or Two Small Loaves
Flour, All Purpose, 2 Cups
Sugar, 1/2 Cup
Baking Soda, 3/4 Teaspoon
Salt, 1/4 Teaspoon
Nutmeg, Ground 1/4 Teaspoon
Walnuts, Chopped, 1 Cup
Bananas, Very Ripe, 4 medium
Eggs, 2 Large
Butter, Salted, 5 Tablespoons
Vanilla Extract, 1 Teaspoon
Greek Yogurt*, Plain, 1/4 cup
*If necessary you may substitute regular yogurt, sour cream, or whole milk.
Step 1 – Melt Butter and Preheat Oven
Preheat oven to 350 degrees. Place butter in a bowl and heat until just starting to melt (about 25 seconds in a microwave). Set aside and allow to cool.
Step 2 – Mix Dry Ingredients For Banana Bread
Mix dry ingredients (flour, sugar, baking soda, salt, nutmeg, and walnuts) together in a separate large bowl.
Step 3 – Mash Bananas and Prepare Wet Ingredients
Place the ripe bananas in another bowl and mash.
Note: In Florida bananas seem to ripen very fast. Whenever you have bananas that are too soft to eat just place them in the freezer in a zip style bag or container. Then pull the frozen bananas out to thaw about 1 hour before you start the banana bread. While the skin turns very brown in the freezer the bananas work great for mashing and making bread.
Mix in the beaten eggs, yogurt, vanilla, and cooled butter with the mashed bananas.
Step 4 – Combine the Wet and Dry Ingredients
Using a spatula or wooden spoon lightly fold the banana mixture into the flour/dry ingredients until just combined. Be careful to avoid over mixing the batter.
Step 5 – Bake the Banana Bread and Serve
Place into a greased loaf pan and bake at 350 degrees until a toothpick inserted in the center comes out clean (about 50- 55 minutes).
