A refreshing green salad is a great way to beat the summer heat.
This recipe takes the boring out of salad with surprising flavors of feta, walnuts, cranberries, strawberries, and balsamic in every bite.
Even better, it’s simple to make and can be paired with your favorite meat or topped with grilled chicken for a meal.
Summer Surprise Salad
Yields: 4 side servings
Spring Mix Greens, 5 ounces
Glazed Walnuts, 1/3rd Cup
Dried Cranberries, 1/3rd Cup
Feta Cheese, Crumbled, 1/3rd Cup
Fresh Strawberries, Diced, 1/2 Cup
Balsamic Vinaigrette Dressing, 1/4 Cup
Step 1 – Prepare Ingredients
This is a very simple recipe. Just crumble the feta cheese, slice the strawberries, and measure out all ingredients.
You can purchase walnuts that are already glazed or make yourself using this glazed nut recipe from Courtney’s Chicken Salad. Glazed almonds also work great if you prefer over walnuts.
Step 2 – Mix and Serve
Toss the mixed greens with the balsamic vinaigrette dressing. Once the greens are coated then add the walnuts, cranberries, feta cheese, and strawberries and lightly toss again.
This salad goes great with a grilled steak in the summer or even a Thanksgiving Turkey in the fall. You can also grill a chicken breast, slice, and place on top of the salad for a meal.
